That could well be a faulty oil pressure sensor, or the wiring.
If that is fine, then the problem is likely serious, and its suspectful the oil pump is worn out or is malfunctioning. It idle, oil pressure is lowest, then as engine speed increases, the oil pressure (slightly) increases, which explains why the light goes out.
You need to get a oil pressure test ASAP, and get the oil level sensor checked. You should be able to confirm its working by removing it, and then bridging it, bridged it shouldnt show, and unbridged it should.
From memory, there are two sensors... The level sensor (with covers MID alarm) on the front of the sump, and an actual oil pressure sensor which is usually higher up the engine block, dependant on engine.
